Fadeaway French Martini



40ml Hennessy V.S. Cognac

30ml pineapple juice
20ml raspberry syrup (see note)

15ml lime juice
3 raspberries or fresh mint, to garnish


1. Add ingredients (except fresh raspberries and mint) to a cocktail shaker and fill with ice to the top. Shake hard and then double strain into a chilled coupe.
2. Garnish with 3 raspberries on a skewer or fresh mint.


NOTE To make a raspberry syrup, combine 10 fresh raspberries with 120ml simple sugar syrup (equal parts sugar and water) in a saucepan, bring just to a simmer, then set aside to cool completely, then strain. The syrup makes enough for 6 cocktails.
