Gunga Din


Makes 1

3 cardamom pods

20ml simple syrup

30ml London dry gin, preferably Old Raj 110

30ml pineapple juice

20ml lime juice

Tonic water (preferably Q tonic), to top

Pineapple fronds, to garnish


1. Combine the cardamom and simple syrup in a cocktail shaker and muddle until fragrant. Add the gin, pineapple juice, and lime juice. Add ice and shake until chilled, about 10 seconds. Fine strain into a tiki mug filled with ice. Top with tonic water and stir gently to combine. Garnish with pineapple fronds.
