Shiso + Ume Sour
"Through Black Market Sake we import this brilliant Red Shiso Liqueur from
a tiny producer in Kyoto called Fruit Liqueur Freaks," ays Matt Young of Ante. "It showcases all of
love the wonderful aroma and flavour of Shiso, so it made sense to make a
cocktail with it."
20ml Fruit Liqueur Freaks Red Shiso Liqueur
30ml Ota Shuzo ‘Dokan’ Umeshu
15ml Roku Gin (or any London Dry gin)
30ml Fresh lemon juice
15ml Egg whites
METHOD
1. Add all ingredients to a cocktail shaker. ‘Dry Shake’ with no ice for 15 seconds to emulsify the egg and give the drink great texture. Next add ice to the mixture and shake again this time for 30 seconds. Strain over a rocks glass filled with ice. Garnish with Shiso powder or a fresh Shiso
leaf.
