Grilled zucchini and buffalo mozzarella salad

Zucchini and buffalo mozzarella is all it takes to create a beautiful side dish for any barbecue.
3 grey zucchini
3 green zucchini
1 tbsp extra-virgin olive oil
2 buffalo mozzarella
A large handful of basil leaves, finely chopped
2 tsp oregano leaves, finely choped
60ml extra-virgin olive oil
1 tbsp white wine vinegar
1. Preheat a charcoal barbecue until hot coals turn white, and set up a rack for indirect grilling. You can also use a gas barbecue we just love the taste you get from charcoal.
2. Grill zucchini in batches, turning once until charred (1-2 minutes each side; depending on the heat). Transfer to a bowl and season to taste.
3. For dressing, stir ingredients to combine and season to taste.
4. To serve, layer zucchini into a serving dish, and tear mozzarella over the zucchini in between adding, while zucchini is still warm, then drizzle with the dressing and give the salad a light toss to combine.
